GRANOLA

“We love to make this granola, its healthy, satisfying and tasty. It goes great with fruit, milk, yogurt, or even by itself. There are so many great granola variations but this recipe brings cashews, almonds, coconut, raisins and currents into the mix for a refreshing and energizing snack.”

ALMONDS

Ingredients:

OATS

4 cups oats

1 cup cashews, whole

1 cup almonds, chopped

1 cup coconut, shredded

1 cup raisins

½ cup currents

½ cup brown sugar

RAISINS

½ cup maple syrup

¼ cup vegetable oil

½ tsp salt

CASHEWS

Method:

Preheat oven to 275 degrees F.

CURRENTS

In a large bowl mix together oats, nuts, coconut and brown sugar. Add maple syrup, vegetable oil and salt, mixing well.

Cover a large baking sheet with parchment paper and evenly spread the granola mixture onto the baking sheet. Bake in the oven at 275 degrees F for 1 hour, stirring every 15 minutes.

Remove from oven, add raisins and currents, and stir well.  Let cool and store in an airtight container.
